Marinated Garbanzas (chick peas)

20 ounces garbanzo beans, drained
1/2 cup vegetable oil
3 tablespoons vinegar, or juice of 1 lemon
1/2 cup chopped parsley
1/4 cup chopped scallions
2 cloves garlic, minced
1/4 teaspoon black pepper

Combine all ingredients and allow to marinate in the refrigerator for at least 2 hours. Drain. Serve with toast rounds, or as part of an antipasto tray with tuna fish, pimientos and olives. Place cocktail plates and forks for the convenience of guests.
