1 pound lean ground beef, or veal
1/2 pound mushrooms
1/2 cup onions,
chopped
8 ounces no-salt-added tomato sauce
16 ounces plum tomatoes
1 clove
garlic, pressed
freshly ground black pepper, (optional)
1/4 teaspoon oregano
1
tablespoon parsley, chopped
vegetable oil spray
1 pound bean sprouts, rinsed
and drained
Wipe mushrooms with a clean, damp cloth. Slice and set aside.
Brown meat in a large skillet over medium-high heat. Pour off fat and add mushrooms
and onion. Cook until tender. Add remaining ingredients except bean sprouts. Reduce
heat and simmer, covered, until sauce thickens.
Lightly spray a large skillet
with vegetable oil. Add bean sprouts, cover and cook over medium-high heat just until
tender-crisp. Serve meat sauce over the hot sprouts.
