vegetable oil spray
2 tablespoons vegetable oil
5 sliced onions

pounds sirloin tip steaks, roasted cut into 1 inch cubes
1 1/2 tablespoons flour
1/4
teaspoon marjoram
1/4 teaspoon thyme
1/2 teaspoon freshly ground black pepper
1/2
cup beef broth
1 cup dry red wine
1/2 pound mushrooms, sliced
Lightly
spray a large, heavy skillet with vegetable oil. Add 2 tablespoons oil and place
over medium-high heat. Add onions and sauté until tender. Remove them to a small bowl
and set aside. Add beef cubes and sauté until browned. Sprinkle flour and seasonings
on top of beef and stir to mix well. Add broth and wine. Stir well and reduce heat.
Simmer 1 1/2 to 2 hours. Add more broth and wine (1 part broth to 2 parts wine) as
necessary to keep beef barely covered. Return onions to skillet and add mushrooms.
Cook 30 minutes longer, stirring frequently. Add more broth and wine if necessary.
Sauce should be thick and dark drown.
