36 ounces boneless chicken breasts, skinned
1 cup chicken broth
1/2
cup chopped onions
1/4 cup chopped green bell peppers
1 cup white wine
1/4
cup chopped parsley
1/2 teaspoon basil
1 bay leaf
1/2 teaspoon thyme

cup rice
4 ounces lean ham
1 cup tomatoes
In a saucepan, bring to a
boil the broth, wine, herbs, onion, green pepper. Place rice, ham, tomatoes and chicken
in a large casserole; pour herb sauce over all. Cover tightly and bake at 350 F.
for 25 to 30 minutes. Add seasoning. Turn heat off; allow casserole to remain in
the oven for 10 to 15 minutes.
