24 ounces boneless chicken breasts, skinned
1/2 cup olive oil
1/3
cup lemon juice
1 tablespoon chopped rosemary
1/4 cup chopped sage
1/2 teaspoon
salt
1 teaspoon black peppercorns, cracked
3 cloves garlic, minced
1 teaspoon
grated lemon rind
Garnish
6 lemon slices, cut in half

Rinse chicken and pat dry. Place pieces between two sheets of plastic wrap and
flatten to 1/8-inch thickness
with a mallet. Arrange chicken in a glass or enamel
baking dish. In a small bowl, combine oil, lemon juice, herbs, salt, pepper, garlic
and lemon rind. Mix well. Pour over chicken and turn pieces to coat evenly. Cover
and refrigerate for several hours or overnight, turning pieces occasionally. Grill
marinated chicken over hot coals.
Serve garnished with lemon slices and sage leaves.
