1 clove garlic, crushed
1 onion, finely chopped
2 tablespoons finely
chopped cilantro
3 tablespoons lime juice
2 tablespoons olive oil
1/2 teaspoon
chili powder
Freshly ground black pepper
32 ounces boneless chicken breasts,
skinned
In a small bowl, combine first seven ingredients. Mix well. Set aside.
Rinse chicken and pat dry. Place in a shallow glass dish. Add lime juice mixture
and stir to coat chicken pieces thoroughly. Cover dish and refrigerate 2 to 3 hours.
Stir several time while marinating to keep chicken well coated. On a preheated outdoor
grill or broiler, cook marinated chicken, turning once, 6 to 7 minutes, or until
done. Serve hot.
