24 ounces boneless chicken breasts, skinned
2 cups chicken broth

1 cup finely chopped onions
1 cup sliced carrots

ounces broccoli flowerettes
1 cup chicken broth
2 tablespoons sherry
2 tablespoons
cornstarch
1 cup orange juice
1 tablespoon light soy sauce
1/2 teaspoon
garlic powder
1 teaspoon grated orange rind
1/4 teaspoon salt
1/3 cup slivered
almonds
Rinse chicken and pat dry. Cut into 1 inch cubes. Set aside. Place 2 cups
chicken broth and chicken in microwave-safe casserole, cover and cook 5 minutes on
medium. Stir and cook another 5 minutes. Drain chicken and discard broth. Transfer
chicken to a place and set aside. In the same casserole dish, melt margarine on
high for 20 seconds. Add vegetables, cover and cook on high 7 minutes. Remove from
microwave and add chicken pieces. Set aside. In a microwave-safe bowl, combine 1
cup of broth and remaining ingredients, except almonds. Cook on high for 5 minutes.
Add to chicken and vegetable mixture in casserole. Stir to mix well. Cover and heat
on medium for 3 minutes, or until all ingredients are evenly heated. Top with almonds
and serve.
