Chicken Curry in a Hurry

1 pound diced cooked chicken breast
1/2 pound mushrooms, thinly sliced
1/3 cup chopped onions
3 tablespoons vegetable oil
3 tablespoons flour
1 cup chicken broth
1 1/2 teaspoons curry powder
1 cup finely chopped apples
1/4 cup chopped parsley
3/4 cup skim milk
1 cup water

In a large skillet, sauté chicken, mushrooms and onion in margarine until chicken is lightly browned on all sides.
Stir in flour, broth and curry powder. Add apple and parsley. Pour in milk and water. Simmer, stirring constantly, for 3 minutes, or until apple pieces are tender-crisp. Serve over rice.
