vegetable oil spray
2 pounds halibut fillets
2/3 cup thinly sliced
onions
1 1/2 cups sliced mushrooms
1/3 cup chopped tomatoes
1/4 cup chopped
green bell peppers
1/4 cup chopped parsley
1 1/2 ounces chopped pimiento strips
1/2
cup dry white wine
2 tablespoons lemon juice
1/4 teaspoon dill weed
Freshly
ground black pepper
8 lemon wedges
Arrange onion slices in the bottom
of greased baking dish and place fish on top. Combine remaining vegetables and spread
over fish. Combine wine, lemon juice and seasoning and pour over all. Cover and
bake at 350 F. for 25 to 30 minutes or until fish flakes easily when tested with
a fork. Garnish with lemon wedges.
