Red Snapper a l'Orange

1 1/2 pounds red snapper fillets, cut into 6 serving pieces
vegetable oil spray
3 tablespoons vegetable oil
2 tablespoons orange juice
1 teaspoon grated orange rind
Freshly ground black pepper
1/8 teaspoon nutmeg

Combine pepper, orange juice, rind and oil. Place fish pieces in a single layer in an oiled pan, and pour sauce on top of fish. Sprinkle with nutmeg and bake at 350 F. 20 to 30 minutes.
