Sole Venetian

vegetable oil spray
1 pound sole fillets
1 tablespoon vegetable oil
1 tablespoon chopped mint
1 clove garlic, chopped
2 tablespoons minced parsley
1 green onion, chopped
1/2 cup dry white wine
1/4 cup water
1/4 teaspoon white pepper
1 tablespoon margarine

Wash and dry the sole. Rub with a paste made of mint, garlic, parsley and 1 tablespoon of oil. Sauté green onion in the remaining tablespoon of oil, add wine, water and seasoning. Meanwhile, broil the fillets until just done and remove to a warm platter. Pour the pan juice into the wine sauce. Heat sauce and pour over sole. Serve at once.
