Stuffed Fresh Beachcomber

vegetable oil spray
3 pounds red snapper, whole fish
Freshly ground black pepper
1/2 teaspoon curry powder
2 tablespoons margarine
6 tablespoons diced onions
3/4 cup sliced mushrooms
3 tablespoons white wine vinegar
1 1/2 cups plain bread crumbs
1/2 cup skim milk
1 egg white, slightly beaten

Sauté onions and mushrooms in margarine 10 minutes. Add vinegar and simmer 10 minutes. Remove from heat and cool 10 minutes. Soak bread crumbs in skim milk, then squeeze out excess milk and add crumbs to onion mixture. Add beaten egg white, with curry powder. Sprinkle fish on all sides with pepper. Stuff with bread mixture; close opening with skewers or picks. Grease a baking dish or line it with unglazed parchment paper; place fish in it. Brush with oil and bake at 375 F. 45 minutes, or until fish flakes easily when tested with a fork.
