Surimi Pitas

8 ounces Surimi seafood, rinsed and flaked
6 tablespoons lowfat mayonnaise
1/4 cup plain nonfat yogurt
1/2 teaspoon grated lemon rind
1/4 cup sliced green onions
1/2 cup diced tomatoes
1/2 cup unpeeled and seeded, diced cucumbers
1 tablespoon finely chopped cilantro
dash hot pepper sauce
5 pita breads
5 pieces leaf lettuce

In a small bowl, combine all ingredients except bread and lettuce. Cover and refrigerate until thoroughly chilled.
Split each pita carefully around top edge of bread, about one-third of the circumference of the bread. Insert lettuce leaf in pita and fill with 1/2 cup surimi mixture. Serve immediately.
