Teriyaki Halibut

8 Servings

1/4 cup light soy sauce
1 tablespoon firmly packed brown sugar
2 tablespoons vegetable oil
1 teaspoon flour
1/2 cup dry white wine
1/2 teaspoon dry mustard
2 pounds halibut fillets
6 slices no-sugar-added canned pineapple
vegetable oil spray

In a small saucepan, combine soy sauce, brown sugar, oil, flour, wine and mustard. Bring to a boil, reduce heat and simmer 3 minutes. Allow to cool. Marinate fillets for 15 minutes in this liquid. Brush pineapple with the marinade and place with the fish in an oiled broiling pan. Broil 5 to 6 inches from the heat for about 5 minutes on each side, or until fish is done. Remove to a warm platter and spoon sauce over the fish and fruit.
