1 1/2 pounds fish fillets, cut 1 inch thick
2 tablespoons vegetable
oil
1/3 cup tarragon vinegar
1 teaspoon Worcestershire sauce
freshly ground
black pepper
1 bay leaf
2 tablespoons chopped parsley
Rinse fish
and pat dry. Set aside.In a shallow glass pan, combine all ingredients except fish.
Stir to mix well. Add fish steaks. Cover and refrigerate at least 3 hours, turning
occasionally. Preheat broiler. Remove steaks from marinade and arrange on a foil-covered
broiler pan. Baste with marinade. Broil 3 inches from heat about 10 minutes, or until
fish flakes easily.
