1 1/2 pounds sole fillets
3/4 cup finely chopped onions
1/2 cup vegetable
oil
1/4 cup lime juice
2 teaspoons grated lime rind
1 tablespoon grated
ginger
1 tablespoon light soy sauce
1/4 teaspoon salt
1/4 teaspoon ground
white pepper
vegetable oil spray
1 1/4 cups plain bread crumbs
2 tablespoons
finely chopped parsley
2 tablespoons finely chopped green onions
Wash and dry fillets and cut into serving pieces. Season, dip in oil, and coat
with bread crumbs. Arrange in a single layer in a lightly oiled shallow baking dish.
Bake at 450 F. for 15 to 18 minutes without turning or basting.
