1 tablespoon finely chopped rosemary
3 cloves garlic, finely minced
3
tablespoons finely chopped parsley
1 1/2 tablespoons olive oil
1 1/2 teaspoons
Dijon mustard
freshly ground black pepper
1 3/4 pounds 3/4-inch-thick lamb

In a small bowl, blend rosemary, garlic, parsley, olive
oil, mustard and pepper to make a paste. Spread evenly on both sides of chops and
let sit at room temperature for 45 minutes. Preheat grill or broiler. Cook chops
6 to 8 minutes, turn and cook and additional 4 to 5 minutes. Serve hot. Serve with
steamed fresh asparagus and a favorite rice dish.
