vegetable oil spray
2 teaspoons vegetable oil
2 cloves garlic, minced
1/2
cup water
1 tablespoon lemon juice
1/2 teaspoon freshly ground black pepper,
(optional)
2 tablespoons chopped mint
1 3/4 pounds loin lamb chops
Preheat
broiler. Lightly spray a broiler pan with vegetable oil. Pour oil into a skillet
over medium-high heat. Add garlic and sauté. Stir in water, lemon juice and pepper.
Bring to a boil and reduce heat to simmer. Sprinkle mint over mixture and simmer
about 10 minutes. Cover and set aside. Place chops on broiler pan about 6 inches
from heat source, Broil 5 minutes on each side, or until done to taste. Transfer
chops to serving dish and pour hot lemon-mint mixture over meat.
