1 1/2 tablespoons vegetable oil
1 1/2 tablespoons flour
1 1/4 cups
beef broth
pinch thyme
pinch basil
1 pound Canadian bacon, sliced
2
tablespoons sherry
Heat oil in a saucepan over medium heat. Blend in flour
and brown it slowly. Add broth slowly, stirring to keep sauce smooth. Add thyme and
basil. Reduce heat and simmer 15 minutes. Place bacon in a skillet over medium-high
heat. Cook 5 minutes, turning often. Remove to a heated serving platter. Discard
drippings.
Strain sauce. Discard solid matter and return sauce to saucepan. Add
sherry and heat thoroughly. Pour sauce over bacon, and serve.
