1 1/2 tablespoons grated Parmesan cheese
2 tablespoons
olive oil
1 cup finely chopped onions
2 cloves garlic, minced
10 ounces
spinach
1 1/2 ounces ham, (1/2 ounce each) cracked-black pepper ham, cut into
strips
1 1/4 cups skim milk
Egg Beaters Real Egg Product, equivalent to 3
eggs
1 tablespoon finely chopped basil
dash nutmeg
1 1/2 tablespoons flour
1/2
teaspoon salt
1/2 teaspoon freshly ground black pepper
4 1/2 teaspoons grated
Parmesan cheese
Preheat oven to 350F. Lightly spray a 9-inch glass pie plate
with vegetable oil. Dust with 1 1/2 tablespoons Parmesan cheese. Heat olive oil in
a nonstick skillet over medium-high heat. Add onion and sauté until translucent. Add
garlic and sauté 1 minute more. Add spinach and ham, stirring until mixture is evenly
blended. Distribute mixture evenly in bottom of prepared pie plate. Set aside. In
a small bowl, combine remaining ingredients. Pour on top of spinach mixture and bake
50 to 55 minutes.
