Southwestern Hash

1 1/2 tablespoons margarine
2 cups cubed day-old cornbread
1 tablespoon margarine
1 tablespoon water
1 onion, chopped
1/2 cup diced green bell peppers
1 clove garlic, minced
1/2 pound ham, cooked,cut into cubes
1 tomato, chopped
1 cup kernel corn, drained
1/8 teaspoon cayenne pepper, (optional)
1/8 teaspoon ground cumin
1 teaspoon minced sage
1/4 teaspoon freshly ground black pepper, (optional)
1 tablespoon minced parsley

Preheat oven to 375F. In a large ovenproof skillet over medium-high heat, melt 1 1/2 tablespoons margarine. Add cornbread and sauté until brown. Remove from skillet and drain on paper towel. Add remaining tablespoon margarine and 1 tablespoon water to same skillet. Add onion, bell pepper and garlic. Sauté until onion is clear. Add ham, tomato and corn. Stir to mix well. Cook, covered, 5 to 6 minutes. Remove cover and add cayenne, cumin, sage and black pepper. Mix well. Add browned cornbread and stir in gently. Place skillet in oven and bake 15 minutes. Remove and top with parsley. Serve with fresh fruit salad and steamed fresh green beans or fresh broccoli.
