6 ounces snow peas, rinsed and trimmed
22 ounces mandarin orange sections,
drained
1 pound cooked chicken breast, cubed
1/4 cup finely chopped red onions
2
ounces thinly sliced water chestnuts
1/2 cup lowfat mayonnaise
1/2 cup lowfat
vanilla yogurt
1 teaspoon grated ginger
1 teaspoon grated lime rind
1/4
teaspoon salt
dash white pepper
Blot snow peas and oranges dry on paper towels. Set aside.
In a bowl, combine
chicken, snow peas, oranges, onion and water chestnuts.
In a small bowl, combine
remaining ingredients. Pour over chicken and vegetables and mix gently
with rubber
spatula. (Be careful to avoid breaking oranges.)
Cover and refrigerate several
hours to allow flavors to blend.
