Chicken Vegetable Salad

1 pound diced cooked chicken breast
1/2 cucumber, peeled and diced
1/2 cup diced celery
4 ounces water chestnuts, drained and sliced
1/4 cup diced green bell peppers
1/4 cup pimiento strips, drained and chopped
1/4 cup sliced scallions
1/4 cup lowfat mayonnaise
2 tablespoons capers
1/4 teaspoon paprika

In a bowl, combine all ingredients except capers and paprika. Toss to mix well.
Sprinkle capers and paprika on top of salad. Serve over crisp salad greens.
