2 tablespoons vegetable oil
1 cup finely chopped onions
1/2 cup diced
celery
1 1/3 cups diced carrots
1 cup diced red bell peppers
3 cups shredded
red cabbage
1/4 cup firmly packed brown sugar
2 tablespoons Dijon mustard
3
tablespoons cornstarch
1/2 cup cider vinegar
1/4 teaspoon salt
1 1/2 cups
apple juice
Heat oil in a large nonstick skillet over medium high heat. Add onions, celery,
carrots and bell pepper.
Sauté until onion is translucent. Add cabbage, cover
and cook 5 minutes.
In a small bowl, combine remaining ingredients. Add to vegetables
and stir to mix well.
Cook until sauce is thick and clear.
