Oriental Rice Salad

3 cups cooked rice
10 ounces peas
4 scallions, sliced
24 ounces diced cooked chicken breast
1 stalk celery, diced
2 tablespoons diced green bell peppers
2 tablespoons sherry
1 tablespoon light soy sauce
1/4 teaspoon hot pepper oil
1/8 teaspoon ground ginger
4 tablespoons rice vinegar
2 tablespoons vegetable oil
1 tablespoon Dijon mustard

In a large bowl, combine rice, peas, scallions, chicken, celery and bell pepper. Mix well.
In a jar with a tight fitting lid, combine remaining ingredients. Shake well. Pour liquid over rice mixture. Mix well. Spoon rice mixture into a ring or serving bowl and cover. Refrigerate for at least 1/2 hour.
