32 ounces bean sprouts
4 cups boiling water
1 tablespoon light soy
sauce
1 tablespoon sherry
1/8 teaspoon ground ginger
1 teaspoon hot sesame
oil
2 tablespoons chopped scallions, (optional)
Immerse bean sprouts in boiling for 1 minute, drain and rinse immediately in
cold water.
In a large bowl, combine bean sprouts, soy sauce, sherry, ginger and
sesame oil. Toss to mix thoroughly.
Sprinkle scallions on top before serving.
