Salmon Salad

8 Servings


2 stalks celery, diced
1 1/2 pounds salmon steaks, 3/4 to 1 inch thick
1 tablespoon olive oil
1/4 teaspoon freshly ground black pepper
1/2 teaspoon thyme
2 tablespoons lemon juice
1/2 cup diced red bell peppers
1/2 cup finely diced onions
2 tablespoons minced parsley
1/2 cup lowfat mayonnaise
1/4 teaspoon hot pepper sauce

Preheat oven to 450F. Rinse salmon steaks and pat dry. Set aside.
In a bowl, combine olive oil, pepper, thyme and 2 tablespoons lemon juice. Brush over salmon.
Place fish on broiler pan and cook 10 minutes, or until fish flakes. Remove from oven and turn over setting to broil. Broil salmon for about 2 minutes. Cool.
Carefully remove all skin and bones from fish. Place salmon in a medium bowl and flake.
Add remaining ingredients and mix well. Cover and refrigerate several hours before serving.
