1 tablespoon vegetable oil
1 tablespoon cornstarch
3/4 cup chicken
broth
1 egg yolk, lightly beaten
2 tablespoons lemon juice
Combine oil and cornstarch in a small saucepan. Stir well. Cook over low heat,
stirring constantly, until
mixture is smooth. Add broth and turn up heat to medium.
Cook, stirring constantly, until mixture thickens.
Remove from heat and add a
small amount of the sauce to beaten egg yolk. Stir to mix well and slowly
pour
egg mixture into sauce. Cook over low heat, stirring constantly, for 1 minute.
Remove
from heat and add lemon juice. Stir to mix well.
