1 tablespoon vegetable oil
1/4 cup diced green bell peppers
1/4 cup
diced red bell peppers
1/4 cup finely chopped onions
1 1/4 cups water
2
tablespoons cornstarch
2 tablespoons firmly packed brown sugar
2/3 cup unsweetened
pineapple juice
6 ounces tomato paste
4 ounces chopped pineapple
1/4 teaspoon
salt
dash hot pepper sauce
Heat oil in a small nonstick skillet over
medium high heat.
Add green and red bell peppers and onion and sauté until onion
is translucent. Set aside.
Combine water, cornstarch, brown sugar and pineapple
juice in a saucepan.
Bring to a boil over medium high heat. Whisk in tomato paste.
Add pineapple, sautéed vegetables, salt and hot pepper sauce.
Stir to mix
well. Cook until thoroughly heated.
