Beef Barley Vegetable Soup

3 pounds beef soup bones
2 quarts water
1 onion, peeled and quartered
freshly ground black pepper, (optional)
1 1/4 cups peeled and thickly chopped carrots
1 cup thickly sliced celery
3 tablespoons pearl barley
1 bay leaf
2 teaspoons salt
24 ounces peeled and diced potatoes
2 teaspoons thyme

Place meat in kettle; cover with cold water, add seasoning. Heat slowly to boiling point, cover and let simmer 2 1/2 - 3 hours, or until meat is tender. Skim off fat. Remove meat and bone, add barley and vegetables, and continue cooking for 45 minutes
