7 cups peeled and chopped tomatoes
1 onion, roughly chopped
1/2 cup
chunks cucumbers
16 ounces tomato juice
1/2 teaspoon cumin
1 clove garlic,
minced
freshly ground black pepper, (optional)
1/4 cup red wine vinegar
Garlic croutons
1/2 cup chopped green bell peppers
1/2 cup chopped onions
1/2
cup chopped cucumbers
1/2 cup green bell peppers, chunks
2 tablespoons olive
oil
In a blender, puree tomatoes, onion, green pepper and cucumber.
Add
tomato juice, cumin, garlic and pepper. Put in a bowl; cover and chill.
Add oil
and vinegar and stir to mix well. Pour into individual serving bowls.
Garnish
with croutons. Place other garnishes in side dishes for individual use.
