2 pounds halibut fillets
1/2 cup chopped onions
1 clove garlic, minced
1/4
cup chopped green bell peppers
3 stalks celery, sliced diagonally
3 carrots,
cut julienne
2 tablespoons acceptable vegetable oil
28 ounces tomatoes
1
cup dry white wine
freshly ground black pepper
1/4 teaspoon thyme
1/4 teaspoon
basil
3 tablespoons minced parsley
Cut fish into 1-inch pieces. and
set aside. Sauté' onion, garlic, green pepper, celery and carrots in oil. Add tomatoes,
wine, black pepper, thyme, basil and 1 tablespoon parsley. Cover and simmer 20 minutes.
Add the halibut. Cover and simmer 5 to 10 minutes more, or until done. Sprinkle with
remaining parsley.
