Lentil Soup

8 Servings


1 tablespoon acceptable margarine
1 onion, chopped
2 cloves garlic, finely chopped
1 cup lentils
7 cups water
1/8 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon cloves
1/8 teaspoon cayenne pepper
1 1/2 teaspoons cumin
Freshly ground black pepper to taste

Melt margarine in pan, saute onion and garlic.
Add remaining ingredients. Bring to boil, reduce heat and simmer 1 1/2 hours.
Place mixture in blender or food processor and blend until smooth. Serve immediately.
