Onion Soup

12 Servings


2 tablespoons vegetable oil, or margarine
3 cups thinly sliced onions
6 cups beef broth
1/2 teaspoon freshly ground black pepper
12 slices French bread, toasted
4 tablespoons Parmesan cheese


Heat margarine in a large saucepan over medium high heat. Add onions and sauté 2 minutes.
Cover and cook onions until translucent. Add broth and black pepper; bring to a boil.
Divide into 6 ovenproof casseroles or bowls. Top each with a two slices of toasted French bread; top
each serving with 2 teaspoons Parmesan cheese. Place bowls in oven and bake 5 minutes.
Serve immediately.
