18 ounces tomato juice
1 1/2 ounces tomato paste
1/2 teaspoon hot
pepper sauce
15 ounces garbanzo beans, drained
6 ounces cubed cooked chicken
breast
1/2 tablespoon crushed oregano
1 avocado, peeled and diced
2 tablespoons
minced parsley
In a saucepan over medium high heat, heat tomato juice, tomato paste and hot
pepper sauce, stirring to
mix well. Add garbanzos and chicken or turkey and bring
to a low boil. Reduce heat immediately, add
oregano and simmer 5 minutes. Stir
in diced avocado and heat for 2 to 3 minutes.
Serve hot with parsley sprinkled
on top.
