Spinach Soup

10 ounces spinach, chopped
2 tablespoons olive oil
2 cups water
2 cups lowfat powdered milk
1 teaspoon onion flakes
1 tablespoon parsley, crushed
1 tablespoon flour
1 tablespoon sherry
black pepper, freshly ground

Heat oil in a heavy saucepan and sauté the spinach quickly until just crisp-tender.
Combine all other ingredients in blender and mix until thick and foamy.
Add spinach and blend again at lowest speed for 4 to 5 seconds or until spinach is chopped
into fine pieces but not pulverized.Pour the mixture back into saucepan and heat slowly, stirring
with a wire whisk to keep from burning. Use an asbestos pad if soup is to left on the stove.
