Winter Pistou

1/2 teaspoon kosher salt
1/2 teaspoon garlic, finely chopped
1/2 teaspoon sweet basil
16 ounces plum tomatoes, drained thoroughly
2 tablespoons vegetable oil

Crush salt, garlic and basil to a dry paste. Add the Italian plum tomatoes broken up, and the oil, and continue mixing to a paste. Serve cold spooned into hot soup.
