24 ounces green beans, French style
8 ounces water chestnuts, drained
and sliced
2 tablespoons sesame seeds
1 teaspoon hot pepper oil
2 teaspoons
vegetable oil
1/2 teaspoon salt
Place sesame seed in a 8 x 8 pan. Toast
them in oven for 2 to 3 minutes, then stir and toast 2 to 3 additional minutes. Rinse
and trim beans. Cut diagonally into 1 1/2 inch lengths. Blanch in boiling water 4
minutes. Plunge in ice water to halt cooking. Drain and set aside. Heat oils in
a skillet over high heat. Add water chestnuts and stir fry 1 minute. Add beans, salt
and sesame seeds. Stir well to evenly distribute ingredients. Cook, stirring constantly,
until thoroughly heated.
