2 pounds beets with greens attached
1/4 cup orange juice
2 tablespoons
cider vinegar
2 tablespoons lemon juice
1/4 teaspoon garlic powder
1 1/2
tablespoons sugar
1/8 teaspoon salt
1/2 teaspoon grated lemon rind
1 1/2
teaspoons margarine
Place beets in a saucepan over medium high heat. Cover
with water and bring to a boil. Reduce heat and cook 30 minutes, or until knife pierces
beet easily. Remove beets from saucepan and drop into cold water. Slip off skin and
dice beets into cubes. Set aside. In a saucepan, combine remaining ingredients except
margarine and bring to a boil. Add beets, stir and cook 2 minutes more. Stir in margarine
and serve.
