Mexican Fried Rice

2 tablespoons vegetable oil
1 cup uncooked rice
1 clove garlic, minced
1/2 cup finely sliced green onions
2/3 cup chopped chili peppers
1/2 cup diced tomatoes
2 cups chicken broth


Heat oil in a heavy skillet over medium-high heat. Add rice and sauté, stirring constantly, until golden brown.
Add remaining ingredients. Cover and simmer 30 minutes, or until rice is tender and liquid is absorbed.
