Orange Spiced Rice

1 tablespoon margarine
1 onion, minced
2 stalks celery, minced
2 cups uncooked brown rice
3 cups water
2 cups chicken broth
2/3 cup golden raisins
Peel of 1 orange, chopped
1/8 teaspoon ground cloves
2 oranges, peeled and cut into small segments


In a large saucepan over medium-high heat, melt margarine. Add onion and celery and sauté 3 minutes. Add rice and sauté 2 additional minutes. Add water, broth, raisins and orange peel. Bring to a boil, then reduce heat. Cover and simmer 30 to 40 minutes. Stir in cloves and orange segments and garnish with mint. Serve immediately.
