2 tablespoons margarine
1/2 cup chopped onions
1/4 cup chopped celery
1/2
cup chopped green bell peppers
2 cups chicken broth
1 cup uncooked long grain
rice
1/2 cup sliced mushrooms
2 tablespoons chopped parsley
3/4 teaspoon
freshly ground black pepper
In a small skillet over medium-high heat, melt margarine. Add onion, celery
and bell pepper and sauté 3 minutes. Set aside. Place broth and rice in a saucepan
over medium heat. Add onion mixture and mushrooms. Reduce heat and simmer, covered,
30 to 40 minutes, or until rice is tender and liquid is absorbed. Add parsley and
black pepper. Fluff before serving.
