2 tablespoons margarine
1/2 cup finely chopped shallots
1 pound mushrooms
1/2
cup dry white wine
Freshly ground black pepper
1 tablespoon finely chopped
parsley
Wipe mushrooms with a clean, damp cloth. Cut into quarters and set aside.
Melt
margarine in a nonstick skillet over medium-high heat. Add shallots and sauté 2 to
3 minutes, stirring constantly. Add mushrooms and wine. Cover and reduce heat to
medium. Cook 7 to 9 minutes. Uncover and increase heat to high. Cook 5 to 6 minutes,
or until juices are evaporated. Add pepper and parsley and stir to mix well. Serve
immediately.
