2 tablespoons margarine
1 1/2 cups uncooked Arborio rice
3 green
onions, finely chopped
1/4 cup dry white wine
1/2 cup chopped mushrooms
pinch turmeric, or saffron
4 cups chicken broth
1 tablespoon grated Parmesan
cheese
Melt margarine in a heavy saucepan over medium heat. Add rice
and green onions and cook slowly, stirring with a wooden spoon, until rice is milky.
Add wine and continue cooking, stirring constantly, until wine is absorbed. Reduce
heat and stir in remaining ingredients except Parmesan. Cover and simmer 20 minutes,
or until rice is tender and liquid is absorbed. Place in a serving bowl and sprinkle
with Parmesan cheese on top.
