1 pound green peas
3 slices lower-salt bacon
1 tablespoon water
2
tablespoons margarine
6 green onions, finely chopped
1 teaspoon Italian herb
seasoning
1 teaspoon freshly ground nutmeg
Cook peas until tender-crisp. Set aside and cool. Cook bacon in a microwave
or in a nonstick skillet over medium heat until crisp. Drain well and dice. Place
water, margarine and onion in a clean skillet over medium-high heat. Sauté until onion
is soft. Reduce heat and add peas, bacon and seasonings. Heat thoroughly and serve
hot.
