1 pound dried black eye peas
water
1/4 pound Canadian bacon
2
onions, chopped
2 stalks celery, chopped
1 bay leaf
1 clove garlic, chopped
1/4
teaspoon cayenne pepper
6 ounces tomato paste
Freshly ground black pepper
Rinse peas and place them in a large saucepan. Cover with water and let soak
for 45 minutes.
Cook Canadian bacon until crisp in a skillet over medium-high
heat. Drain on paper towels. Chop and set aside.
Drain peas and return them to
the large saucepan. Add just enough fresh water to cover. Add bacon and remaining
ingredients. Bring to a boil over medium-high heat. Reduce heat, cover and simmer
3 hours, or until tender.
