1 tablespoon margarine
1/2 cup finely chopped onions
1/2 cup diced
red bell peppers
1/2 cup diced green chili peppers
1/2 cup nonfat cottage cheese
1/4
cup skim milk
1/2 tablespoon freshly ground black pepper
1/2 teaspoon chili
powder
2 cups kernel corn
2 teaspoons finely chopped cilantro
Melt
margarine in a nonstick skillet over medium high heat. Add onion and bell pepper
and sauté until onion is translucent. Add chili peppers, cream cheese, milk, black
pepper and chili powder. Cook until mixture is smooth. Stir in corn and reduce heat.
Cook over low heat until corn is hot. Add cilantro and serve immediately.
