Stir-Fried Spinach

1 pound spinach
1 tablespoon vegetable oil

Rinse spinach thoroughly, remove stems and drain well. Heat oil in a skillet or wok over medium-high heat. Add spinach and stir, turning over leaves several times until they are well coated. Cover and cook 1 minute. Uncover and cook, stirring constantly, another 30 seconds, or until spinach is wilted. Do not overcook. Serve at once
