3 large ripe tomatoes
2 tablespoons finely chopped
onions
2 tablespoons finely chopped parsley
1 tablespoon margarine, melted
6
ounces chopped spinach
Freshly ground black pepper
dash paprika
2 tablespoons
plain bread crumbs
Preheat oven to 375 F. Lightly spray a shallow baking
dish with vegetable oil. Cut tomatoes in half. Remove seeds and discard. Place tomatoes,
cut side up, in prepared dish. In a small bowl, combine onion, parsley, margarine,
spinach, pepper and paprika. Spread evenly over tomatoes. Top with crumbs and bake
15 minutes.
