Spinach Crepes

11 ounces chopped spinach
3 tablespoons margarine
3 tablespoons whole wheat flour
1 cup skim milk
3/4 cup water
1/4 teaspoon nutmeg
1/8 teaspoon cayenne pepper
3 tablespoons Parmesan cheese, grated
6 whole-wheat crepes


If using fresh spinach, rinse well, remove stems and drain. Steam just until done. Drain and set aside in a large bowl. In a large skillet over medium-high heat, melt margarine. Add flour, stirring constantly. Cook 2 minutes. Add milk slowly, stirring constantly. When sauce begins to thicken slightly, add water, nutmeg cayenne and cheese. Cook 5 additional minutes, or until sauce begins to thicken again. Add sauce to cooked and drained spinach and stir to mix well. Spoon one-sixth of filling onto each crepe and fold crepe over filling.
Serve immediately.
